It’s birthday weekend!

Today is my birthday (yay!) and I’m sure we’ll be eating lots of yummy food this weekend.

Tomorrow is my mom’s birthday!

I’ll see them next weekend but we’ll be FaceTiming her later tomorrow. 🙂

I made this delicious beast for dinner the other night.

It’s rye bread toast with guacamole, feta cheese, and a drizzle of balsamic glaze.

It’s super tasty and fairly healthy. Yum!

We found this cool trail the other day and we took a walk by the stream. I think this summer we’ll get our bikes out and wander down it.

If I liked running (and I don’t), this would be a great place for a run after work.

I stayed up way too late watching the Championship game on Monday.

Congrats to UNC on an awesome win!

I turned the game on about halfway through the first half and pretty much couldn’t stop watching. Despite wanting to do a few other things and bedtime, I stayed up to watch the end.

Gonzaga played a fantastic game and it was hard fought right until the end.

Maybe next week I’ll talk about why I love sports.

My aunt and uncle are very involved in the Ugandan Water Project. I’ll admit, I have no idea how the got involved.

My uncle has been to Uganda a few times and my aunt went with him this year. They did a fundraiser and raised enough money with our family to be able to supply an entire well for a school. This means that children who used to have to get up at 3am to walk to the well for water, can just focus on school. It’s pretty moving how they got involved and I’m always happy to support them.

They sent us a little present when they returned. A picture of them with the kids in front of the well we sponsored. A cute bowl that was made in Uganda. And some of our life’s blood – super awesome coffee. haha

It was a nice little present to get in the mail and we’re happy to have helped, even if it was a tiny bit.
