Today we’re talking about our yummy fall recipes.
True confession: I haven’t started making my fall recipes.
I think Monday was the first day it was below 75 degrees outside and let’s face it – no one wants to eat soup when it’s that hot outside.
You guys – this is legit one of our very favorite soups.
I have no idea who Mike Dundon is – I think he worked with my mother-in-law. (She’s the one who shared this soup with me.) But if I ever meet him, I’m going to be all like, your soup is the greatest!!
I do tweak this recipe a little bit – we chop up the mushrooms, don’t use the parsely, and add an entire small can of tomato paste.
I would also recommend you try it with all the cheeses sprinkled on top, but it tastes great with just one, two, or none. 🙂
I’m also going to leave you with this one hack that we do in my family.
As you know, we’re from Buffalo.
We like our wings.
We also like chicken wing soup.
Sometimes we don’t have the time to make chicken wing soup, but we already have chicken (or turkey) soup.
So we improvise.
If you take chicken soup – just regular chicken soup. Mix in some blue cheese dressing and some Frank’s Hot Sauce (to taste). Sprinkle some blue cheese crumbles on top and you’ve got yourself a quick chicken wing soup.
My sister-in-law and I do this when my mother-in-law makes her healthy chicken soup and we want to kick it up a notch!
