Holy Cow! It’s the end of October? I’ve lost all sense of time because I saw an old friend and told her that we should get together this summer. This summer?!?! I need time to slow down. Or a nap!

[what we’re eating this week]
We’re eating this roasted chicken and vegetables. It’s the easiest thing ever, Friends.
Line a turkey pan with foil. Put down cut veggies – I use potatoes, onions, and parsnips. (Sometimes The Hubster sneaks in carrots, but I’m not a fan.) Drizzle olive oil over the veggies and make sure it’s all mixed over them.
Using the turkey rack upside down, put chicken thighs on the rack. Drizzle each thigh with olive oil and season with salt and pepper.
Bake for 25 minutes at 425*. Check to make sure everything looks good. (I once had some potatoes burn and moved them around to avoid further burning.) Continue to bake for 25 more minutes.
We usually top the chicken with pesto before we eat it. And it’s delicious.

All the patio furniture and the fire pit are put away for the winter. Sad. 😦

I love all my Fall decorations! It seems like each year we find something else to make it more fun.
[what we’ve been up to]
We are still giggling to ourselves about the Gatsby fundraiser we went to last week. While I don’t think the 20s were my era, it was still fund to pretend for a night!
[what i’m dreading]
We’re heading to the World’s Largest Disco (see what i’m looking forward to next month), and it’s in Buffalo. In November. Which means it could be warm and sunny. Or a foot of snow.
And while I’m a proud product of Buffalo, this outfit in the snow, notsomuch.
Plus, a winter coat is totally going to ruin my look.
I’m too old to be going out without a coat, too. When I was 19, well, that was another story. #ineverworeacoatclubbing #youngandstupid But I like to think I’ve matured. And I don’t like being cold. Or potentially get frostbite.
For some occasions, I would risk it. For the World’s Largest Disco? I don’t think so.

After a crazy summer, we’re finally getting away! We’re heading to our favorite B&B for a week of relaxing. We have some pretty fun plans, much of which I hope include napping, shopping, and eating. 🙂

How did I just notice that there’s a new Nicholas Sparks book?!?! I’m not sure how long this has been out, but the second I realized it was available, I downloaded it.
I don’t know about you, but I have read every single one of Nicholas Sparks’s books. And watched the movies. (obviously)
I didn’t start this book yet because I’m going to take it with me on our trip in a couple weeks. But eeeeeeee – I’m so excited to start it!
You guys – it’s finally time!!! Hallmark Christmas movies!!!
So I’ll be seeing you sometime in January when these go off the air until July. hahaha

It’s Halloween party time! Can’t wait to share what our costumes are for this year’s party.
I’m actually quite happy with ours this year. It was creative and I think will be fun!
